After his exensive travels in Europe and America Tony returned to Ireland 10 years ago. In that time Tony sharpened his skills in notable local eateries such as Lawlors Hotel, The Silken Thomas and The Castle Inn. Tony works within the seasons choosing his produce locally. Tony prepares them simply and heartfully.

Andrew Byrne

Andrew returned to his native Athy after exhaustive travels in America where he homed his skills at Aute Joe and Planet Hollywood.
He returned to Ireland and worked at The Sappers, Ready Catering Co.
He brings a diverse knowledge of traditiona l and ethnic cookery to The Bay Tree.
